Beef bone broth bonus

Bovine vertebral disc anatomy: a serendipitous moment

This delicioso, relatively low sodium roast beef taco was prepared with a portion of the meat remaining from a bone-in ribeye roast I utilized to make beef bone broth for intermittent fasting. The naan bread was 830 mg sodium. No other sodium was added in the making of this delightful soft taco.

When I crock-potted the bone-in ribeye roast, I precoated with quinoa flour/garlic powder and fried in olive oil to brown on all sides. I added onion (flavor), petite carrots (sweetness) and peeled potato (to absorb and enrich flavor) chunks and cooked it down before adding it to the prepared crock pot water (on high) for the prescribed amount of cooking time and temperature.

I use Dr. Kellyann’s Bone Broth Diet book to generally guide me in bone broth preparation and intermittent fasting. I do not use the massive volume of bones as usually recommended in my beef bone broth preparation.

I also like to generally respect the suggestions of Dr. D’Adamo in his book “Eat right 4 your type,” in food choices for my blood type.

As a general rule, I am approaching this from the perspective of a 60+ year-old person who is attempting to learn how to live the back end of life a bit more gracefully. I simply cannot consume the quantity of food that I once could (without regret). I am also interested in personal weight management.
